Ingredients
- 1 (140g) small avocado, peeled and mashed
- 1 medium tomato, finely cubed
- ½ small onion, finely chopped
- 2 Tbsp. (80g) low-fat cottage cheese
- 1 chilli, finely chopped (add more for a spicier taste)
- Juice of half a lemon
- Pinch of salt
- Ground black pepper
- 4 large brown rice cakes
Method
- Mix the mashed avocado with the tomato, onions, and cottage cheese.
- Add the chilli, lemon juice and flavour with salt and pepper.
- Divide mixture into four equal amounts.
- Spread the divided mixture on each rice cake and serve.
