Method
- Heat the oil in a pan and add all the vegetables except the lentils.
- Cook over low heat for 10 minutes stirring occasionally.
- Add 300ml water (rest will be added at the end) and seasoning. Simmer until the vegetables are tender (about 25 minutes).
- Add the lentils and heat the soup through and add the remaining water (little bit at a time) until a smooth and thick consistency is reached. More water can be added if needed.
