Suganon Xylitol Churro Pancakes

Try these low-carb pancakes made with sugar-free Suganon Xylitol.

Ingredients

  • 1 ½ cups flour
  • 1 ½ tsp. baking powder
  • 2 tbsp. Suganon Xylitol sweetener
  • 1 tsp. cinnamon powder
  • 2 tbsp. vegetable oil
  • 1 ½ cups milk
  • 1 egg

Coating

  • ½ cup Suganon Xylitol sweetener
  • 3 tsp. cinnamon powder
  • ¼ cup melted butter

Method

  1. In a medium sized bowl, whisk together flour, baking powder, cinnamon powder and Suganon Xylitol sweetener.
  2. Add in milk, egg and vegetable oil and whisk until combined.
  3. Once combined, set aside and warm a skillet or pan with butter or coconut oil.
  4. Fry your pancakes until both sides are golden brown.
  5. When the pancakes are done, combine the Suganon Xylitol sweetener and cinnamon powder.
  6. Brush both sides of the pancakes with the melted butter, and then coat in the Suganon cinnamon powder.
  7. Once they are all done, enjoy warm.

Fabulite Breakfast Smoothie

Start the day right with a special treat, packed full nutrients and good for your waistline.

Ingredients:
½ cup Fabulite plain yoghurt
1 large frozen banana
6 large frozen strawberries
1 slice fresh ginger root
1 cup skim milk
¼ cup wheat germ

Method:
Place all the ingredients in a blender and blend until creamy.

Recipe tip

Wholegrains could be a great addition to a smoothie to make it crunchier and up the nutrition stakes. Just ensure that what you add contains no hidden sugars that will contribute to increased blood sugar. And always remember to control the serving size! 

You can consider using oats or bran when making a smoothie, but keep an eye on the product’s nutritional info, sugar and carbohydrate content; when added up it should all still be within your daily allowed totals.

Another option for a fabulous Fabulite smoothie is adding some fresh blueberries and sliced almonds to a tub of Fabulite yoghurt of your choice.

Albany Bread-A-Betix Super Citrus Chicken Sarmie

INGREDIENTS

  • 2 slices Albany Bread-A-Betix Low G.I. White Bread

For the citrus mayo:

  • 60ml mayo
  • 5ml lemon zest
  • 5ml lemon juice
  • 5ml orange juice
  • 5ml orange zest
  • 1 chicken breast
  • 2,5ml ground ginger
  • Olive oil for frying

For the cucumber pickle:

  • 80ml apple cider vinegar
  • Black sesame seeds
  • 15ml brown sugar
  • ¼ cucumber, shaved
  • Fresh watercress

METHOD

  1. For the chicken breast, toss in the ginger and pan fry until cooked through and golden. Slice.
  2. For the pickle, mix together the vinegar, sugar, and black sesame seeds and then toss in the shaved cucumber. Leave to pickle for 15 minutes.
  3. For the citrus mayo, mix together the lemon and orange zest, juice, mayonnaise and season to taste.
  4. For the sarmie, spread the 2 slices of bread with citrus mayonnaise, top with watercress then place sliced, grilled chicken on each slice.
  5. Top with cucumber pickle and extra zest!

No Bake Coconut & Vanilla Cheesecake

Ingredients

  • 450g fat-free cream cheese, softened
  • 1 packet sugar-free instant vanilla pudding mix
  • 3/4 cup fat-free plain yogurt
  • 1 cup skim milk
  • 1 teaspoon coconut extract
  • 170g of mixed berry low GI Thistlewood biscuits, crushed
  • 2 Tbsp. melted coconut oil (give or take)
  • Thistlewood Red Cherry “Sugar free” jam (no added sugar, sweetened with sorbitol)

Method

  1. Crush or lightly blitz your Thistlewood biscuits to form a crumb. Mix the crumbs and coconut oil together until combined. Add 2 loosely-packed tablespoons of crumb to the bottom of each mould or serving dish, and use your fingers or a spoon to pack it down firmly.
  2. In a medium bowl, stir cream cheese with a spoon until soft. Add dry instant pudding mix, yogurt, skim milk, and 1 teaspoon coconut extract. Mix well with a wire whisk. Spread mixture evenly onto the crumb. Cover and refrigerate 2 hours, or until firmly set.
  3. Serve with a healthy teaspoon of Thistlewood Red Cherry “Sugar free” jam (no added sugar, sweetened with sorbitol).

Delicious cottage cheese flapjacks

Makes approximately 12 – 15 flapjacks   
1 serving = 3 flapjacks with 1 tablespoon jam

Ingredients

  • 1 cup low-GI oats
  • 250 g low-fat chunky cottage cheese
  • extra large egg
  • 3 egg whites
  • 4 sticks of Stevia
  • 1/2 tsp vanilla extract
  • Olive oil cooking spray
  • favourite sugar-free Thistlewood Jam

Method

  1. Put oats into a blender, or food processor and blitz to a grainy batter.
  2. Add remaining ingredients, and process into a batter. Leave to rest for about half an hour, at room temperature.
  3. Heat non-stick skillet over medium heat. (Use a little non-stick olive oil cooking spray to help keep from sticking).
  4. Pour tablespoons per flapjack into pan & allow to cook until small bubbles form (about 4-5mins) then flip & allow to cook the same on the otherside.
  5. Serve with your favourite sugar-free Thistlewood jam (which is suitable for Type 1 diabetes).

Overnight FUTURELIFE® Smart Oats®

Ingredients

  • 50 g FUTURELIFE® Smart Oats®
  • 1/2 cup milk
  • 1 Tbsp. Yoghurt
  • Berries
  • 1 Tbsp. Chia seeds

Method

  1. Add your FUTURELIFE® Smart Oats® and milk to a bowl and mix well.
  2. Pour half mixture in a jar, spoon over some slices up fresh berries.
  3. Pour over remainder of oats mixture.
  4. Place in fridge overnight.
  5. In the morning top with yoghurt, chia seeds and sliced berries.

Ingredients

  • 1/3 cup mixed frozen berries
  • 125 ml plain fat free / low fat yoghurt
  • 125 ml water

FUTURELIFE® HIGH PROTEIN Smart food™ MUFFINS

Ingredients

  • 200ml (4/5 cup) FUTURELIFE®HIGH PROTEIN Smart food™
  • 250ml (1 cup) whole wheat flour
  • 5ml (1 tsp) salt
  • 20ml (4 tsp) baking powder
  • 15ml (1 Tbsp.) sugar
  • 1 egg
  • 60ml (4 Tbsp.) butter/margarine/coconut oil
  • 250ml (1 cup) low fat milk
  • 1 tsp of low sugar low salt peanut butter for each muffin’s centre

*Optional: Grate 1 cup carrot or apples and a few Tbsp. of seeds to the wet ingredients.

Method

  1. Pre-heat the oven to 200°C and grease a muffin tin.
  2. Mix all the dry ingredients together.
  3. Whisk egg. Add the butter/margarine/coconut oil and milk to the beaten egg and whisk until combined.
  4. Add wet ingredients to dry ingredient and fold together until just combined.
  5. Spoon equal amounts of batter into greased muffin tin. Spoon a teaspoon of peanut butter into each centre of the muffins.
  6. Bake for 15 – 20 minutes.
  7. Freeze in an airtight bag or enjoy fresh.

* Make a batch and freeze. To defrost leave to thaw at room temperature.
