These delicious Chimichurri Pork Meatballs are an easy, high-protein midweek hit that will satisfy even the hungriest family members. The lean pork mince and almond flour are more nutritious alternatives.

Ingredients

Meatballs

  • 500g lean pork mince
  • 1/2 cup almond flour
  • 1/2 cup fine bread crumbs
  • 1 egg
  • Salt and pepper
  • Olive oil to fry

Chimichurri sauce

  • 1 small shallot, cut into wedges
  • 3/4 cup flat-leaf parsley leaves
  • 1 fresh oregano leaves
  • 2 garlic cloves
  • 1 1/2 tsp. kosher salt
  • 1 tsp. freshly cracked black pepper
  • 1/2 tsp. red pepper flakes
  • 3/4 cup extra virgin olive oil
  • 1/4 cup red wine vinegar, plus more to taste

Method

Meatballs

  1. Combine the lean pork mince, almond flour, bread crumbs, egg, salt and pepper in a bowl.
  2. Mix well and roll into balls.
  3. Fry in olive oil until crispy.
  4. Serve with Chimichurri sauce.

Chimichurri sauce

  1. In the base of a food processor, combine the shallot, parsley, oregano, garlic cloves, salt, and pepper. Pulse until well combined but still slightly chunky.
  2. Transfer the mixture to a small bowl. Add the olive oil, vinegar, and red pepper flakes. Stir to combine. Store refrigerated in an airtight container for up to two weeks.

This Smoky Kassler Pork and Roasted Veg Salad is a hearty yet refreshing meal perfect for any season.


This dish is a blend of rich flavours of smoked pork steak with the sweet earthiness of roasted butternut and gem squash, tossed with mixed salad leaves, pomegranate seeds, and macadamias and finished with a tangy sun-dried tomato buttermilk dressing.

Ingredients

For the salad:

  • 400g smoked Kassler pork steak, cubed
  • 4 cups mixed salad leaves
  • ½ cup deseeded cherries
  • 1½ cups roasted butternut squash, with honey butter
  • 1 gem squash, sliced and toasted, with honey butter
  • Salted and chopped macadamias to taste
  • Pomegranate seeds to garnish
  • Soft goat’s cheese, to taste

For the dressing:

  • ¼ cup buttermilk
  • 1/3 cup sun-dried tomatoes
  • ¼ cup oil (from the sun-dried tomatoes)
  • 1 Tbsp. Dijon mustard
  • 2 Tbsp. honey
  • ¼ cup red wine vinegar
  • Salt and pepper, to taste

Method

  1. Sauté the Kassler pork cubes in a pan until golden.
  2. Prepare the dressing by blending all ingredients until smooth, then chill.
  3. Assemble the salad with leaves, roasted vegetables, pork, cherries, macadamias, and goat’s cheese. Drizzle with the dressing before serving.

INGREDIENTS

Crust

  • 200g sugar-free digestive biscuits (1 packet)
  • 60ml (1/4 cup) soft tubs margarine, light, melted

Filling

  • 750g (3 tubs) smooth low-fat cottage cheese
  • 250ml (1 cup) blueberries
  • 45ml (3 Tbsp.) corn flour
  • 15ml (1 Tbsp.) vanilla essence
  • 60ml (1/4 cup) Huletts EquiSweet Xylitol

Topping

  • 15ml (1 Tbsp.) Huletts EquiSweet Xylitol
  • 125ml (1/2 cup or tub) low-fat cottage cheese
  • ½ cup fresh strawberries
  • ½ cup fresh blueberries

METHOD

Crust

  1. Preheat the oven to 160⁰. Grease a 23cm springform tin.
  2. Place the biscuits in a food processor and blend to make crumbs. Mix with the melted margarine.
  3. Press the crumb mix into the base of the tin and place in the refrigerator for 20 minutes.

Filling

  1. Place the low-fat cottage cheese, blueberries, corn flour, vanilla essence and Huletts EquiSweet Xylitol into a food processor and blend together until well combined.
  2. Pour over the base of the chilled crust and bake for 45 minutes or until set.
  3. Remove from the oven and leave to cool completely before placing in the refrigerator for two hours. Gently loosen the tin and remove the cake.

Topping

    2. Decorate the cheesecake with the berries before serving.

INGREDIENTS

  • 1 Tbsp. baking powder
  • 250ml (1 cup) rolled oats (180g)
  • 125ml (1/2 cup) cake flour (70g)
  • 1 tsp. cinnamon
  • 60ml (1/4cup) soft tubs margarine, light (57.5g)
  • 10 Huletts EquiSweet Classic sachets
  • 2 eggs, lightly beaten
  • 185ml (3/4 cup) low-fat yoghurt/cottage cheese
  • 1 Tbsp. vanilla essence
  • 100g frozen berries (just over ½ cup or 125ml)
  • 1 large peach or nectarine, thinly sliced
  • Optional: extra grilled low-GI fruit for garnishing

METHOD

  1. Preheat oven to 180°C. Line and grease a 20cm x 25cm baking tray.
  2. Combine the flour, baking powder, cinnamon, EquiSweet and oats in a mixing bowl and make a well in the centre.
  3. In a separate bowl, whisk the eggs, yoghurt, vanilla essence and melted margarine until well combined.
  4. Pour the whisked egg and yoghurt mixture into the well in the centre of the dry ingredients and mix into a batter.
  5. Spoon the batter into the greased baking tray, and smooth out into an even layer.
  6. Lay the berries and peach slices on top of the batter.
  7. Bake for 45 minutes.
  8. Cool in the tin for 10 minutes, garnish, slice and enjoy.

NOTES: Can be stored in an airtight container in the fridge for up to four days.

  • 2 sprigs fresh mint

  • 2 thumb-sized pieces of fresh ginger, peeled and finely grated
  • 500ml water
  • 500ml soda water
  • 2 cups crushed ice
  • 1 fresh lime, sliced

METHOD

  1. Place the Huletts Equisweet, half of the fresh chopped strawberries and 500ml water into a pot on the stove and bring to boil.
  2. Reduce the heat and take the grated ginger and squeeze the juice into the pot. Discard the pith.
  3. Let the strawberry ginger cordial bubble for 10 minutes, stir in the lemon juice.
  4. Remove from the heat and cool. Place in the fridge or freezer to speed up cooling time.
  5. Prepare a jug or pitcher with two cups crushed ice, fresh mint leaves, fresh lime and the remaining fresh strawberries.
  6. Muddle the ice and fresh ingredients together.
  7. Pour in the cooled cordial, top up with soda and serve.

Classic Tacos

INGREDIENTS

  • 4 corn tortillas or 8 small corn tortillas (<20g carbs per tortilla/per 2 smaller tortillas)
  • 1 Tbsp. avocado oil
  • 500g extra lean beef-/ostrich-/chicken mince
  • 1 tsp. onion powder
  • 1/2 tsp. garlic powder
  • 1/2 tsp. sea salt
  • 1/2 tsp. cumin
  • 1/2 head green lettuce, small, finely chopped
  • ½ – 1 onion, medium, peeled, finely chopped
  • 2 tomatoes, medium, finely diced
  • 8 Tbsp. Fabulite Fat Free Plain Yoghurt
  • 1 small avocado, mashed

METHOD

Guacamole

  • Mix Fabulite Fat Free Plain Yoghurt with the mashed avocado, finely chopped tomatoes and onions (tomatoes and onions can also be added separately if preferred).

Tortillas and mince

  • Prepare tortillas according to instructions on the package.
  • Heat a large skillet over medium heat. Add the avocado oil and your choice of mince, stirring to break it up as it cooks. Add the onion powder, garlic powder, salt and cumin to the pan. Once the mince is cooked through, remove from heat.

Serving

  • Add the lettuce to the centre of each tortilla, then top with mince.
  • Top the filled tacos with the guacamole mixture (divide between the tacos which equals to about three Tbsp. per serving).
  • Fold the taco in half and enjoy immediately.

Notes

  • More toppings: low-fat salsa, olives, red onions, cilantro or roasted corn (less than 1 Tbsp.).
  • Vegan or vegetarian: use lentils instead of mince.
